Tuna and Mushroom Pasta

Serves 4

 

Ingredients

500g pasta of your choice

180g butter

2 large onions, chopped

1 bunch spring onions, white part only, chopped

500g white button mushrooms, quartered

170g can tuna

125ml cream

15ml tomato paste

30ml chopped parsley

lemon pepper and salt, to taste

 

Method

1 Cook pasta as per instructions on packet.

2 Melt butter in a saucepan and add onion, spring onion and mushrooms. Cook for 5 minutes.

3 Add tuna and cook a further few minutes.

5 Stir in cream and tomato paste. Bring to the boil and remove from heat immediately.

6 Stir in parsley and season to taste with lemon pepper and salt.

7 Once pasta is cooked, drain and place in a serving dish. Pour over sauce and serve.
