Thai Mushroom Chutney

Serves 2

Ingredients

200g white button mushrooms

2-3 green chilies

4 cloves garlic

4 shallots

1tbsp fish sauce

½tsp sugar

1tbsp lime juice

coriander leaves for garnishing


Method

1 Roast mushrooms and chillies in a preheated 220°C oven for 5 minutes. Reserve the juice from the baking. Mince mushrooms and chillies with a knife, transfer to the mixing bowls and coarsely mash them with a wooden spoon.

2 Grill shallots and garlic in the oven at 250°C for 5 minutes. Grind shallots and garlic to a rough paste and add to the mushroom mixture.

3 Add juice from the baking, fish sauce, sugar and lime juice. Mix well and adjust the seasoning as you like. Sprinkle with coriander and serve.
