Spicy Pork Salad with Mushrooms

Serves 4

 

Ingredients

250g lean pork mince

250g button mushrooms, chopped and pan fried

2 spring onions, finely sliced

1 fresh chilli, finely chopped

5ml ground ginger

5ml lemon zest

2ml ground cumin

20ml sweet chilli sauce

125ml dried breadcrumbs

1 egg

2 handfuls mixed salad leaves

½ avocado, peeled and sliced

1 chilli, sliced

½ punnet button mushrooms, sliced and pan fried

15ml sesame seeds

 

Method

1 In a bowl, combine the lean pork mince, chopped button mushrooms, spring onion and chilli. Mix together and then add the ginger, zest, cumin, sweet chilli sauce, breadcrumbs and egg. Season with salt and freshly ground pepper.

2 Roll into balls and place onto a baking sheet. Brush with a little oil and bake at 180°C for 15-17 minutes.

3 Toss together the remaining ingredients and serve with the pork balls.

 

Cooks tip

You could also serve the pork balls with a stir-fry of peppers, courgettes, carrots and cabbage.
