While I absolutely do consider myself a fungi fanatic, I have to confess that I find the creamy mushroom sauces served by most steak and burger restaurants fairly revolting. I know, creamy mushroom sauce is most people’s favourite! But I just can’t do it. Turn those same mushrooms into a Chasseur Sauce however, and well… “You had me at Hello!” If you’ve never tasted it, this classic French brown sauce is a luscious mix of chopped mushrooms, shallots and white wine, often with tomatoes and finely minced fresh herbs. Well made, it is heavenly on beef, chicken and any sort of game meat. And it’s not that hard to make at home – although finding it on a restaurant menu can be a bit of a feat!
