It’s Photostat dinner tonight! Found a page I’d copied from an Essentials magazine, maybe three years ago, tucked away in a handbag I haven’t used in ages. It’s for a side dish of Roasted Mushrooms: Preheat oven to 200°C. Place 8 portobello mushrooms, stalk side up, on a baking sheet. Chop 1 clove garlic and stir into 50g salted butter along with 1tsp fennel seeds, lightly crushed, and the zest of 2 lemons (keep some of the zest in reserve). Dot over the mushrooms and roast for 15 mins. Scatter the reserved lemon zest and a little chopped parsley over the mushrooms. I’m going to serve them with the Lamb Chops Beira-Style recipe I got from my mom last week – found the page in my jeans pocket when I did the washing this morning.
