Ham, Mushroom and Cheese Coffee Cup Scramble
Ingredients
1 egg
1tbsp water
¼ cup chopped fresh mushrooms
1 thin slice ham, chopped
grated cheese of your choice
Method
Coat a 350ml microwave-safe coffee mug with cooking spray. Add egg, water, mushrooms and ham; beat until blended. Microwave on high for 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer, depending on your microwave. Season with salt and pepper. Top with cheese.
