Spinach & Mushroom Stuffed Butternut with Quinoa & Avocado

Ingredients
1 butternut
olive oil as needed
salt & pepper as needed
2 cups water
1 cup quinoa
1 clove garlic
2 cups spinach
1 cup fresh mushrooms, sliced
1 avocado
1 lemon
black sesame & hemp seeds as needed
Method
1 Cut the butternut in half, drizzle with oil, season well and bake in a 180°C oven for about 45 minutes. The butternut is done when it can easily be cut with a fork.
2 Boil water and add quinoa. Cook for about 15-20 minutes, until water is absorbed and the quinoa is fluffy.
3 Meanwhile, heat oil in a pan, add minced garlic, spinach and mushrooms and cook until tender. Season well.
4 To serve, place the spinach-mushroom mix in the butternut halves. Cover quinoa with avocado slices and serve with half a lemon. Top everything with black sesame and hemp seeds.
