Mushrooms with green beans
Serves 4
Ingredients
250g fresh green beans, trimmed
1tbsp water
2tbsp olive oil
1 medium onion, finely chopped
500g sliced mushrooms (mix of Portabellini and Portobello), roughly chopped
salt & pepper to season
Method
1 Put green beans in a microwave with water on high for 4 minutes. Once done, carefully remove excess water and set aside.
2 While green beans are cooking, heat oil over medium heat in a large skillet/sauté pan. Add onion and cook until soft. Add mushrooms and cook, stirring occasionally, until they begin to brown.
3 Add green beans and stir to combine and rewarm. Season with salt & pepper and serve.
