Mushrooms with Green Beans

Serves 2

 

Ingredients

250g (1 cup) fresh green beans, trimmed

1 tbsp water

2 tbsp olive oil

1 medium onion, finely chopped

500g sliced mushrooms (mix of Portabellini and Portobello), roughly chopped

salt and pepper to season

 

Method

1 Put green beans in a microwave with water on high for 4 minutes.

2 Once done, carefully remove excess water and set aside.

3 While green beans are cooking, heat oil over medium heat in a large skillet/sauté pan.

4 Add onion and cook until soft. Add mushrooms and cook, stirring occasionally until they begin to brown.

5 Add green beans and stir to combine and warm through. Season with salt and pepper to taste.
