Mushroom Salad with Lemon Soy Dressing

Serves 4

 

Ingredients

500g mixed fresh mushrooms

45ml (3 tbsp) butter

15ml (1 tbsp) grapeseed oil

4 cups lollo rosso lettuce leaves

lemon zest cut into thin strips

garlic chives

LEMON SOY DRESSING

60ml (¼ cup) lemon juice

30ml (2 tbsp) soy sauce

2,5ml (½ tsp) freshly ground black pepper

5ml (1 tsp) garlic, minced

90ml (6 tbsp) grapeseed oil

 

Method

1 First the dressing. Combine all the ingredients and whisk well. Set aside.

2 Wipe the mushrooms clean and trim the stalks. Break the mushrooms into chunks.

3 Heat the butter and oil until foamy on high heat. Sauté the mushrooms in batches until nicely browned. Combine the mushrooms with the dressing.

4 Divide the lettuce between 4 plates. Spoon the mushrooms onto the lettuce and top with the lemon strips and garlic chives. Serve at once.
