Mushroom & Peppers Stir-Fry

Serves 2-3

 

Ingredients

2 tbsp olive oil

1 large onion, sliced

3 garlic cloves, minced

1 green, 1 red and 1 yellow pepper, cut in strips

250g white Button mushrooms, sliced thinly with stems

1 tbsp white wine (optional)

2 -3 tbsp soy sauce or any other sauce of choice

1 tsp sesame oil (optional) or olive oil to enhance flavour

 

Method

1 Heat oil in the pan or use cooking spray to avoid onions sticking to the pan.

2 Stir-fry onions until translucent then add garlic cloves and cook for 20 seconds.

3 Add peppers and mushrooms. Stir-fry until softened.

4 Add the white wine, if using, and soy sauce and continue to stir-fry for 2 minutes.

5 Remove from heat and add the sesame oil. Serve immediately.
