Mushroom & Chorizo Tacos

Makes 4

 

Ingredients

10ml olive oil

2 garlic cloves, diced

300g Button mushrooms, quartered

200g chorizo sausage, sliced

5ml paprika

15ml sweet chilli sauce

3 spring onions, sliced

100g cherry tomatoes, halved

45ml fresh coriander, chopped

4 – 6 soft corn tortillas, lightly toasted

TO SERVE

sour cream

lettuce, shredded

cheddar cheese, grated

 

Method

1 Heat oil in a frying pan and fry the garlic, Button mushrooms, paprika and chorizo for 5 – 6 minutes.

2 Remove from the heat, stir in the sweet chilli sauce, spring onion, cherry tomatoes and coriander.

3 Lightly toast the tortilla shells in a hot, dry frying pan for 45 – 60 seconds per sides.

4 Fill the tacos with sour cream, lettuce and cheddar cheese and top with the mushroom and chorizo filling.
