Mushroom and Haloumi Burgers

Serves 4

 

Ingredients

8 large Portabello mushrooms, stems trimmed

10ml crushed garlic

30 – 45ml olive oil

250g haloumi cheese, cut into slices

4 garlic and herb flavoured bread rolls, split and buttered

salt & freshly ground black pepper

GARNISH

1 red onion, sliced

1 large tomato, sliced

pickled gherkin, slices

lettuce leaves

wild rocket

 

Method

1 Wipe mushroom caps with a clean, damp cloth.

2 Combine garlic and olive oil together and brush over mushrooms. Allow to stand for 10 minutes.

3 Cook mushrooms in a lightly oiled, preheated frying pan or griddle pan for 4 – 5 minutes or until mushrooms are just tender. Season, set aside and keep warm.

4 Wipe pan clean and brush with a little extra oil. Fry cheese slices for 1 – 2 minutes on each side.

5 Fill rolls with desired garnishes and top with mushrooms and cheese. Serve immediately.
