Mushroom and Beef Spring Rolls with a Honey Ginger Sauce

 

Serves 6

 

Ingredients

20ml olive oil

½ onion, sliced

200g beef, sliced

1 punnet Portabellini mushrooms, sliced

10ml light soy sauce

15ml lemon juice

15ml honey

salt and pepper

spring roll wrappers

vegetable oil for shallow frying

80ml honey

20ml lemon juice

5ml ground ginger

5ml light soy sauce

 

Method

1 Heat the olive oil in a pan, add the onion and sauté. Add the beef and sauté until browned.

2 Add the mushrooms and sauté until golden. Add the 10ml soy sauce, 15ml lemon juice and 15ml honey, season to taste with salt and black pepper.

3 Roll the mixture into spring rolls with the spring roll wrappers.

4 Heat the vegetable oil and fry on both sides until golden.

5 Mix the remaining honey, lemon juice, ginger and soy sauce together and serve as a dipping sauce. Serve while spring rolls are still warm.
