Marinated Garlic Mushrooms for Antipasto
Ingredients
500g button mushrooms
1tbsp powdered chicken or veg stock
4tbsp extra virgin olive oil, or more if needed
3tbsp white wine vinegar
2 cloves garlic, crushed
1 small red onion, finely chopped
2tsp fresh oregano, finely chopped
2tsp fresh thyme, finely chopped
1tsp salt
Method
1 Clean mushrooms very well and remove stems.
2 In a pot, just cover the mushrooms with water, add the stock powder, bring to the boil and cook for 10 minutes. Drain and cool.
3 Combine the rest of the ingredients in a clean glass jar, add the mushrooms, seal the jar, shake gently to combine and refrigerate for 6 hours.
