They add rich flavour and loads of nutrients to every plate of food they’re part of, but they also have that amazing “blendability” factor! This means they can be used to substitute all or part of higher fat, more calorie dense foods like mince. All you have to do is chop your fresh mushrooms to the texture of the mince or tofu you are using, and swap out some of the meat for the fungi, resulting in dishes with lower overall calories and amped-up taste.
