Creamy Mushroom Pasta
Serves 2

 

Ingredients

2 cups cooked pasta of your choice

1 tbsp olive oil

½ onion, chopped

225g sliced white Button mushrooms

2 garlic cloves, crushed (optional)

pinch of salt and pepper, to season

¼ cup white wine (optional)

handful chopped fresh thyme or 1 tsp dried herb of your choice

½ cup reduced fat cream

¼ cup parmesan cheese (optional)

¼ chopped fresh parsley

 

Method

1 Cook pasta according to package instructions.

2 Heat a pan over medium heat, add oil and swirl to coat.

3 Add onion, mushrooms, garlic, pinch of salt and pepper. Sauté for 10 minutes or until mushrooms are browned and have released their liquid.

4 Add wine (optional) and herbs and cook until the liquid evaporates, stirring occasionally.

5 Remove pan from heat, add hot cooked pasta, a pinch of salt, as well as the reduced fat cream and parmesan cheese, if using.

6 Toss to combine and sprinkle with parsley. Serve warm immediately.
