Chasseur Sauce

 

Ingredients

3½tbsp butter

1tbsp flour

3 spring onions, ends trimmed, finely chopped

100g button mushrooms, sliced

½ cup dry white wine

½ cup fresh chicken stock

100ml tomato purée

1tbsp chopped fresh flat-leaf parsley

1tbsp brandy

salt and freshly ground black pepper

 

Method

1 Heat the butter in a saucepan over medium-low heat until foaming. Add the flour and stir for 2 minutes.

2 Add the onion and mushrooms and cook gently until the mushrooms are tender. Add remaining ingredients.

3 Bring to the boil, stirring constantly. Reduce the heat to low and simmer, stirring, until the sauce thickens slightly and coats the back of a spoon. Adjust seasoning and serve with chicken, beef or venison.
