26 Jan 2015Last week’s Crispy Potato, Onion and Mushroom Rosti https://bit.ly/1CmJ1Jo had readers salivating, and still more crying: “But where’s the Banting version?” Well here it is: https://bit.ly/1xtvU6k – it’s made from courgette, onion, egg and mint, but changing the herb and adding sautéed mushrooms, either in the mixture to fry or on the top, should be no problem at all. Use it with any topping you like – from bacon or creamy chicken, to pulled pork and Mexican stir-fry. But truth be told, I’m super keen on using the entire Banting Burgers with Feta recipe, of which the rosti forms the base, as is – looks super yummy!
