Asian Mushroom and Chicken Stir-Fry

Serves 4

 

Ingredients

30ml oil or peanut oil

1 garlic clove, crushed

1-2 red chillies, deseeded, sliced

250g chicken mince

300g large Brown Mushrooms, thickly sliced

200g green beans, sliced in long strips

1 red pepper, deseeded and sliced in long strips

1 bunch spring onions, sliced

5ml sesame oil

60ml chicken stock

30ml soy sauce

15ml brown sugar

1 lime, juice only

TO SERVE

mashed potato, rice or noodles

 

Method

1 Heat the oil in a large frying pan over a medium heat. Add the garlic and chilli and cook for 1 minute.

2 Increase the heat and add the chicken mince. Stir-fry for 4-5 minutes. Add the mushrooms and fry for 3 minutes. Add the green beans, red pepper and spring onion and cook for 3-4 minutes.

3 Add the sesame oil, chicken stock, soy sauce and brown sugar and cook for 5 minutes. Remove from the heat and stir in the lime juice.

4 Serve on a bed of mashed potato, rice or noodles.
