I’m a salsa maniac! Avo with red onion, tomato and coriander; pineapple, cherry tomatoes and Peppadew® Piquanté Peppers… just can’t get enough of them! But Mushroom Salsa? I’d never heard of such a thing until a kind reader sent me the link to the recipe below https://bit.ly/1LF80yP. Turns out to be a real winner on all meats braaied! Try it this weekend…
Mushroom Salsa
Ingredients
4tbsp olive oil
2tsp finely chopped garlic
1 long red chilli
360g mixed fresh mushrooms
salt and freshly ground pepper
½ cup finely chopped spring onions
4tsp lime juice
2tbsp chopped mint
1tsp soy sauce
2 cups rocket leaves
Method
1 Toss 3tbsp olive oil, garlic and whole chilli with mushrooms in a large bowl and let marinate for 1 hour. Season with salt and pepper.
2 Preheat grill to high or get your braai blazing. Grill chilli 2-3 minutes per side and mushrooms 4-5 minutes per side or until tender and juices have begun to evaporate. Larger mushrooms may take longer. Remove from grill and cool.
3 Peel and deseed chilli. Finely chop it and the mushrooms and combine in a bowl with spring onions, lime juice, mint, soy sauce and the remaining tablespoon of olive oil. Season with salt and pepper.
4 Serve with rocket leaves over steak.
