Stuffed mini peppers with ricotta and red onion

Serves: 4-6

Ingredients

For 5

You will need...

  • 8 Mini peppers, halved
  • 10 ml Olive oil
  • 250 g Button mushrooms, diced
  • 1 Clove garlic, crushed
  • 5 ml Lemon juice
  • 2 ml Lemon pepper
  • 0.5 Yellow mini pepper, diced
  • 0.25 Red onion, finely diced
  • 125 ml Ricotta cheese
  • Fresh basil

Stuffed mini peppers with ricotta and red onion Method

  1. Remove the seeds and stalk from the peppers. Heat the oil in a frying pan and add the mushrooms, fry until just golden, add the garlic, lemon juice and lemon pepper, season with salt and pepper.
  2. Stuff the peppers, with the mushroom, diced pepper and red onion and top with the ricotta cheese.
  3. Place the peppers onto a braai grid on medium hot coals and braai until just tender, Garnish with a basil leaf and enjoy hot from the grid.

    Cooks tip: You can also use large bell peppers by cutting off the top, removing the seeds and stuffing it with the filling.
