Tuna and Mushroom Pasta


For 1

You will need...

  • 500 g Pasta or macaroni of your choice
  • 180 g Butter
  • 2 Large onions, chopped
  • 1 bunch Spring onions, white part only, chopped
  • 500 g White button mushrooms, quartered
  • 170 g Can of tuna
  • 125 g Cream
  • 15 ml Tomato paste
  • 30 ml Parsley, chopped
  • Lemon pepper and salt to taste

Tuna and mushroom pasta Method

  1. Cook pasta as per instructions on packet.
  2. Melt butter in a saucepan and add onion, spring onion and mushrooms.  Cook for 5 minutes.
  3. Add tuna and cook a further few minutes.
  4. Stir in cream and tomato paste.  Bring to the boil and remove from heat immediately.
  5. Stir in parsley and season to taste with salt and parsley.
  6. Once pasta is cooked, drain and place in a serving dish. Pour over sauce and serve.
