Chilli & Mushroom Con Carne


For 5

You will need...

  • 15 ml oil
  • 2 onions, peeled, finely chopped
  • 2 garlic cloves, crushed
  • 1 small red chilli, finely sliced
  • 4 ml cayenne pepper (according to taste)
  • 5 ml ground cumin
  • 3 ml ground cinnamon
  • 250 g lean beef mince
  • 250 g Button Mushrooms, sliced
  • 30 ml tomato paste
  • 410 g can chopped tomatoes
  • 500 ml beef stock
  • salt and milled black pepper
  • 400 g can red kidney beans, drained, rinsed

Chilli & Mushroom Con Carne Method

  1. Heat the oil in a pot over a medium heat.
  2. Add the onion and cook for 3-4 minutes until it.
  3. Stir in the garlic, chilli, cayenne pepper, cumin and cinnamon and cook for 1 minute.
  4. Add mince and cook, stirring, for 5-7 minutes, or until the meat is browned.
  5. Add the mushrooms and cook for 3-4 minutes.
  6. Sir in the tomato paste, chopped tomatoes and beef stock.
  7. Season with salt and pepper and bring to the boil.
  8. Reduce the heat to low, and simmer for 35 minutes.
  9. Add the kidney beans and cook for 10-15 minutes.
  10. Serve with white rice, diced toppings and coriander leaves (optional).
