Mushroom chicken a la king

This is the healthier option with mushrooms, here are the ingredients for the Chicken a la king without mushrooms:

 

20g butter
10ml olive oil 
½ green pepper, halved, deseeded and finely chopped 
1 onion, finely chopped
5 steamed or roasted chicken breasts, sliced
15ml flour
150ml milk
5ml salt
2ml black pepper
150ml cream
250ml low sodium chicken stock
Fresh summer salad to serve

You will need...

  • 20 g Butter
  • 10 ml Olive oil
  • 0.5 Green pepper, halved, deseeded and finely chopped
  • 1 Onion, finely chopped
  • 3 Steamed or roasted chicken breasts, sliced
  • 2 Punnets portabelini mushrooms, trimmed and quartered
  • 15 ml Flour
  • 150 ml Milk
  • 3 ml Salt
  • 2 ml Black pepper
  • 150 ml Cream
  • 250 ml Low sodium chicken stock
  • Fresh summer salad to serve

Mushroom chicken a la king Method

    1. Melt the butter and olive oil in a frying pan. Add the green pepper and onion and sauté to soften.
    2. Add the sliced mushrooms and fry for a few minutes.
    3. Remove the pan from the heat and stir in the flour. Gradually stir in chicken stock and then the milk.
    4. Replace the pan over the heat and cook until the mixture thickens and comes to the boil, stirring all the time. Add the cream and stir through. Season with salt and pepper.
    5. Add the pieces of chicken and heat through gently. 
    6. Serve with a fresh summer salad.
     
    Cooks tip: chicken a la king is a great dish to make to freeze.
