Mushroom and sweet piquanté pepper sushi


For 2

You will need...

  • 1 cup Sushi rice
  • 1 cup Water
  • 40 ml Rice vinegar
  • 40 ml Sugar
  • 5 ml Salt
  • 4 Sheets of nori
  • 6 Portabellini mushrooms, sliced
  • 1 Avocado, sliced
  • 0.33 Cucumber, julienne
  • 4 Whole PEPPADEW® sweet & sour Goldew Peppers, sliced

Mushroom and sweet piquanté pepper sushi Method

  1. To make the rice: Wash the rice and rinse thoroughly. Place the rice and water into a pot and cook gently until the rice is just tender and the water has been absorbed. Mix together the rice vinegar, sugar and salt; cook over a medium heat until sugar has dissolved. Allow to cool.
  2. Place the cooked rice into a large mixing bowl; then pour the vinegar sauce over the hot rice and mix.
  3. Place a sheet of nori onto a sushi mat and then cover it with a thin layer of sushi rice – push it down with your fingers.
  4. Lay a row of mushrooms, avocado, cucumber and sweet and sour Goldew peppers onto one side of the rice
    Roll the sushi roll into a tight cylinder. Slice it into bite size pieces with a sharp knife and serve with soya sauce and pickled ginger. Repeat with the remaining ingredients.
