Mushroom, chicken and vegetable kebabs

Ingredients

For 2

You will need..

  • 4 Water-soaked wooden skewers
  • 12 White button mushroom
  • 6 Cherry tomatoes
  • 4 Courgettes
  • 2 Chicken breasts (spiced to taste)
  • 15 ml Olive Oil
  • 50 gm Butter

Mushroom, chicken and vegetable kebabs Method

  1. Cut chicken breasts and courgettes into bite-sized pieces

    Heat oil and butter in large frying pan

    Add chicken pieces and cook for 5 minutes over high heat

    Add white button mushrooms and cook for a further 3 minutes

    Take chicken and mushrooms off the heat

    Add courgettes and cherry tomatoes and lightly cook for 2 – 3 minutes

    Take courgettes and cherry tomatoes off the heat

    Thread mushrooms, chicken, tomatoes and courgettes onto skewers

    Serve on yellow rice
