Sweet chilli and ginger mushrooms


For 4

You will need...

  • 30 ml Peanut oil
  • 30 ml Freshly grated ginger
  • 500 g Button mushrooms, quartered
  • 250 g Portabellini mushrooms, quartered
  • 80 ml Sweet chilli sauce
  • 1 bunch spring onions, thinly sliced
  • Steamed jasmine rice, to serve

Sweet chilli and ginger mushrooms Method

  1. Heat a wok over high heat.  Add oil and heat until hot.  Add ginger and stir-fry for 30 seconds or until aromatic.

    Add Portabellini mushrooms to wok and stir-fry for 1 minute. Add button mushrooms and stir-fry for 1 minute or until well coated with oil mixture.

    Add sweet chilli sauce and stir-fry for 2 minutes or until mushrooms are just tender.  Remove from heat and add green onions. Toss well to combine.  Serve immediately with steamed jasmine rice.
