Grilled oyster mushrooms


For 8

You will need...

  • 2 tbsp Fresh orange juice
  • 1 tbsp Fresh lemon juice
  • 2 tsp Red-wine vinegar
  • 6 tbsp Olive oil
  • 1 kg Large oyster mushrooms, stems trimmed
  • 0.5 tsp Coarse sea salt (preferably Sicilian)

Grilled oyster mushrooms Method

  1. Whisk together juices, vinegar, and oil in a large bowl.
  2. Toss mushrooms with vinaigrette and marinate 15 minutes.
  3. Transfer mushrooms to another bowl reserving vinaigrette.
  4. Place mushrooms on braai griddle and turn frequently until golden brown.  (Mushrooms cooked over a grill will cook very fast and become dried out, so move them around the fire for better heat control - don't let them burn!)
  5. Transfer mushrooms back to vinaigrette when grilled, then toss with sea salt and serve.

    Cooks' note: If your sea salt is very granular and pebble like, crush it using the flat side of a large heavy knife or the bottom of a heavy skillet.
