Mushroom Pate

Ingredients

For 5

You will need...

  • 20 ml Olive oil
  • 1 Small onion
  • 1 Clove garlic, crushed
  • 300 g Button mushrooms, roughly chopped
  • 15 ml Cake flour
  • 65 ml Low fat plain yoghurt
  • 30 ml Crème fraiche
  • 10 ml Fresh lemon juice
  • 15 ml Fresh thyme
  • 15 ml Fresh rosemary
  • Salt and pepper
  • Melba toast to serve

Mushroom Pate Method

  1. Heat the olive oil in a frying pan add the onion and sauté until glossy, add the garlic and sauté for a further minute.
  2. Add the mushrooms and cook until golden, add the flour and mix together. Add the yoghurt, crème fraiche, and lemon juice. Cook until it thickens slightly. Add the herbs and season with salt and pepper.
  3. Transfer the mixture to a food processor and process until a desired consistency is achieved.
  4. Serve with melba toast.
