For 2

You will need...

  • 2 cups portabellini mushrooms, sliced (you can buy already sliced mushrooms to save prep time)
  • 1 tablespoon of extra virgin olive oil
  • 2 cloves Garlic chopped
  • 1 tablespoon balsamic vinegar
  • Salt and pepper
  • Two slices of your favourite low GI bread
  • 1 small to medium avocado
  • Half a lemon

Mushroom Avo toast by Clinton Bakasa Method

  1. Warm a pan over high heat. Add the oil, then add the garlic. After one minute add the
    mushrooms to the pan. Toss to ensure all the mushrooms are covered in oil.
  2. Cover the pan with the lid and allow the mushrooms to cook for 3min, until the mushrooms
    are tender and lightly brown. Turn down the heat to low, remove lid add salt and pepper to
  3. Turn the heat off add the balsamic vinegar and mix well. Turn the heat back to high and allow
    any excess liquid to evaporate. The mushrooms should be browned and decreased in size by
    now. Turn the heat off and let them sit a bit as you prep the toast.
  4. Toast the bread and mash the avocado on top of each toasted slice. Squeeze lemon over.
  5. Then top the avocado toast with the mushrooms.
  6. For an extra zing sprinkle freshly chopped parsley and/or some chilli flakes. Enjoy
