Mushroom, thyme & hummus open sandwichesFeatured

Sometimes the recipes with the least amount of ingredients are the most successful. Hummus is delicious with mushrooms, mushrooms and thyme work well together – so why not put all three onto an open sarmie. Enjoy the mushrooms raw, as they are just as healthy and tasty as cooked mushrooms and packed with nutrients.

You will need...

  • 250 ml store-bought or homemade hummus
  • 8 slices rye bread, fresh or toasted
  • 8 button mushrooms, thinly sliced
  • a few sprigs fresh thyme

Mushroom, thyme & hummus open sandwiches Method

  1. Spread hummus onto each slice of bread – butter is not necessary.
  2. Top with mushroom slices and sprinkle thyme over.
  3. Enjoy as a light meal or lunch. The sandwiches work well on a snack platter, just cut them a bit smaller so that they are easier to handle.
  4. Tips: The ingredients can be packed seperately into a lunch box or picnic basket. Assemble the open sandwiches just before eating or make closed sandwiches with extra slices of bread. Another delicious combination for an open sandwich is ricotta, apple slices, honey and fresh thyme.
