Muscle building mushroom and beef stir fry

Ingredients

For 4

You will need...

  • 2 tbsp Olive oil
  • 1 clove Garlic, crushed
  • 200 g Beef strips
  • 1 Red pepper, deseeded and sliced
  • 300 g Oyster mushrooms
  • 4 Small bok choy, quartered or handful baby spinach leaves
  • 100 g Bean sprouts
  • 2 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 1 Lime, juiced
  • Coriander or basil leaves to garnish

Muscle building mushroom and beef stir fry Method

  1. Heat the oil in a pan or wok and fry the garlic and beef over a high heat for 2 minutes. Add the red pepper and oyster mushrooms and cook for 1 minute. Stir in the bok choy and cook for another minute. Finally add the bean sprouts, oyster sauce, sesame oil and lime juice and cook for 30 seconds. Remove from the heat and add some coriander and/or basil leaves if desired.

One of the best muscle building vegetables that you should consider are mushrooms - they are perfect because they're low in calories, high in fibre but yet at the same time pack a powerful protein punch. Spinach is high in blood-boosting iron that is better absorbed by the body when eaten with Vitamin C - found in red peppers. Fresh vegetables contain slow-release carbohydrates, fibre and essential nutrients to keep you firing on all cylinders.
