Mushroom & Chorizo Tacos


For 4

You will need...

  • 10 ml olive oil
  • 2 cloves garlic, diced
  • 300 g button mushrooms, quartered
  • 200 g chorizo sausage, sliced
  • 5 ml paprika
  • 15 ml sweet chilli sauce
  • 3 spring onions, sliced
  • 100 g cherry tomatoes, halved
  • 45 ml fresh coriander, chopped
  • 6 soft corn tortillas, lightly toasted

Mushroom & Chorizo Tacos Method

  1. Heat oil in a frying pan and fry the garlic, button mushrooms, paprika and chorizo for 5 – 6 minutes.
  2. Remove from the heat, stir in the sweet chilli sauce, spring onion, cherry tomatoes and coriander.
  3. Lightly toast the tortilla shells in a hot, dry frying pan for 45-60 seconds per sides.
  4. Fill the tacos with sour cream, lettuce and cheddar cheese and the mushroom and chorizo filling.
