Mushroom and Beef Hash

  • 2 tbsp olive oil
  • 0.5 onion, chopped
  • 0.5 green pepper, chopped
  • 250 fresh Portabellini mushrooms, sliced
  • 2 cups cooked sweet potato pieces
  • 1.5 cups leftover roast beef, shredded
  • 1 handful mixed fresh herbs, roughly chopped

Mushroom and Beef Hash Method

    1. In a large, heavy skillet, heat the oil and fry the onion and green pepper until softened, about 3 minutes. 
    2. Add the mushrooms and fry until beginning to colour, about 5 minutes. 
    3. Add sweet potato and beef. Stir to combine and season to taste. Cook, turning occasionally, until the mixture is flecked brown, there are some crispy bits and everything is piping hot. 
    4. Stir in the herbs and serve.
