Roasted Mushroom Medley

  • 250 g halved, white button mushrooms
  • 250 g wedged, portabello mushrooms
  • 0.25 cup(s) olive oil
  • 2 garlic cloves, chopped
  • Salt & pepper
  • 1 tbsp dried herbs of choice or fresh herbs
  • 1 tbsp balsamic vinegar
  • 1 can(s) chopped tomatoes

Roasted Mushroom Medley Method

    1. Preheat oven to 180 degrees C
    2. Mix olive oil with garlic, herbs and seasoning in an oven proof dish
    3. Add mushrooms and mix well coating the mushrooms with flavored oil.
    4. Roast for until cooked through and nicely golden brown, add chopped tomatoes and cook through.
    5. Remove from heat, and drizzle with balsamic vinegar (optional).
