Mushroom and Asparagus Vietnamese rice paper rolls with ginger dressing

You will need...

  • 6 Portabella mushrooms, sliced
  • 0.5 cup Carrots, julienned
  • 1 cup Mixed sprouts
  • 8 spears Asparagus, blanched and cut into half
  • 5 g Coriander, chopped
  • 5 g Mint, chopped
  • 8 Rice paper wrappers
  • 250 ml Mushroom soya sauce
  • 30 ml Fresh lime juice
  • 5 ml Fresh ginger, grated
  • 2 ml Fresh garlic, crushed

Mushroom and asparagus Vietnamese rice paper rolls with ginger dressing Method

  1. Toss the first 6 ingredients in large bowl.
  2. Dip one rice paper wrapper into cold water.Shake off excess water.
  3. Place vegetable filling off-centre on rice paper and wrap it like a normal spring roll – turning up the edges and rolling it into a cigar.
  4. Repeat with remaining vegetable filling and rice paper wrappers.
  5. Mix the dipping sauce ingredients together and serve with the spring rolls. Garnish with lime wedges and fresh coriander
