Mushroom and bacon balls

Ingredients

For 4

You will need...

  • 0.5 Onion, finely chopped
  • 2 Sprigs parsley, roughly chopped
  • 1 Red chilli, remove seeds and vein and finely chop
  • 0.5 Punnet button mushrooms, chopped and pan-fried
  • 250 Lean pork mince
  • 125 Dried bread crumbs
  • 1 Large Egg
  • Salt and pepper
  • 125 Streaky bacon

Mushroom and bacon balls Method

    1. In a bowl mix the onion parsley, and chilli. Add the mushrooms, mince, crumbs and egg. Season with salt and black pepper.
    2. Roll the mixture into bite sized balls, roll the bacon around the ball and place the seam onto the baking tray.
    3. Bake for 10-12 minutes or until the balls are cooked through and golden.
    4. Serve warm with a sweet chilli dipping sauce.
     
    Cooks tip: Make your own breadcrumbs, by blitzing white bread or bread rolls in a food processor, place the crumbs onto an oven tray and bake at 120C until the bread crumbs are dried, toss them together every 5 minutes.
