Spicey Pork Salad


For 4

You will need...

  • 250 g Lean pork mince
  • 250 g Button mushrooms, chopped and pan fried
  • 2 Spring onions, finely sliced
  • 1 Chilli, finely chopped
  • 5 ml Ground ginger
  • 5 ml Lemon zest
  • 2 ml Ground cumin
  • 20 ml Sweet chilli sauce
  • 125 ml Dried bread crumbs
  • 1 Egg
  • 2 handful(s) Mixed salad leaves
  • 0.5 Avocado, peeled and sliced
  • 1 Chilli, sliced
  • 0.5 Punnet mushrooms, sliced and pan fried
  • 15 ml Sesame seeds

Spicey Pork Salad Method

  1. In a bowl mix the lean pork mince, add the mushrooms, spring onions and chilli. Mix together and then add the ginger, zest, cumin, sweet chilli sauce, bread crumbs and egg. Season with salt and freshly ground pepper.
  2. Roll into balls and place onto baking sheet, brush with oil and bake at 180 degrees for 15-17 minutes.
  3. Toss the rest of the ingredients together with the balls.
