Mushroom And Chicken Stuffed Peppers


For 1

You will need...

  • 15 ml Olive oil
  • 1 Garlic clove, crushed
  • 1 Spring onion, finely sliced
  • 250 g Minced chicken
  • 250 g Button mushrooms, chopped and pan-fried
  • 8 Mini peppers, slice the side off and remove the seeds
  • 2 ml Lemon pepper
  • 100 Grated parmesan cheese

Mushroom and chicken stuffed peppers Method

  1. Heat the olive oil in a frying pan add the garlic and spring onion and gently sauté, taking care not to burn the garlic.
  2. Add the chicken and sauté until browned, add the mushrooms.
  3. Dice the pieces of pepper you removed and add to the pan, add the lemon pepper and season to taste with salt.
  4. Fill the peppers with the filling, and place onto a baking tray, Sprinkle with the parmesan and bake in a preheated oven for 15 minutes or until the peppers are just tender and the cheese is golden.

    Cooks tip: Serve with couscous and a salad for a great weeknight meal
