Lamb Pita with Tzatziki


For 6

You will need...

  • 250 g Lean lamb mince
  • 250 g Button mushrooms, chopped and pan fried
  • 1 Sprig of mint, chopped
  • 125 Dried bread crumbs
  • 1 Large egg
  • 2 Spring onions, finely sliced
  • 5 ml Ground coriander
  • 2 ml Ground ginger
  • 250 ml Greek yoghurt
  • 1 Clove of garlic, crushed
  • 0.33 Cucumber, grated
  • 12 Mini pita buns

Lamb Pita with Tzatziki Method

  1. In a bowl mix the lamb mince and mushrooms together. Add the mint, bread crumbs, egg and onion. Mix in the spices and season with salt and freshly ground pepper.
  2. Divide the mixture into 24 balls and fry on both sides until cooked through. Place onto kitchen towelling to drain.
  3. In a small bowl mix the yoghurt, garlic and cucumber together, season with salt and pepper.
  4. Slice pockets into the pita bread. Fill the pita bread with tzatziki and two lamb meat balls.

    Cooks tip: For vegetarian option, make falafel.
