Portabella Burgers


For 4

You will need...

  • 4 Large big brown (Portabella) mushrooms
  • 30 ml Olive Oil
  • Salt and ground black pepper, to taste
  • 4 Hamburger buns, lightly toasted
  • 2 ml Dijon mustard
  • 1 Large tomato, sliced
  • Lettuce leaves and pickles if desired

Portabella Burgers Method

  1. Brush both sides of the mushrooms with a little oil, and season to taste
  2. Heat a large heavy based non-stick pan over medium-high heat, add the remaining oil.
  3. When oil is hot, place mushrooms gill side up in the pan for 5 minutes; turn over for a further 5 minutes till tender but still crunchy
  4. Spread inside of buns with mustard, dividing evenly. Top with portabellas; add tomato slices, lettuce, onion and/or pickles, to taste.
  5. Variation:
  6. Portabella Cheeseburger: Top each cooked mushroom with 1 slice of cheese, pop under a grill for a few minutes before serving
