Mushroom salad with lemon soy dressing

This salad is the perfect lunch treat for mushroom lovers.


For 4

You will need...

  • 500 g Mixed mushrooms
  • 45 ml Butter
  • 15 ml Grapeseed oil
  • 4 cups Lollo rosso lettuce leaves
  • Lemon zest cut into thin strips
  • Garlic chives

Lemon soy dressing:

  • 60 ml Lemon juice
  • 30 ml Soy sauce
  • 2.5 ml Freshly ground black pepper
  • 5 ml Garlic, minced
  • 90 ml Grapeseed oil

Mushroom salad with lemon soy dressing Method

  1. First the dressing. Combine all the ingredients and whisk well. Set aside.
  2. Wipe the mushrooms clean and trim the stalks. Break the mushrooms into chunks.
  3. Heat the butter and oil until foamy on high heat. Sauté the mushrooms in batches until nicely browned. Combine the mushrooms with the dressing.
  4. Divide the lettuce between 4 plates. Spoon the mushrooms onto the lettuce and top with the lemon strips and garlic chives. Serve at once.
