French toast with mushroomsFeatured

Mushrooms are a perfect breakfast food – they are packed with vitamins and minerals and are delicious with eggs. Turn French toast into a gourmet ‘brekkie’ with mushrooms, dollops of cottage cheese and fresh rocket leaves.


For 4

You will need...

  • 250 g button or portabellini mushrooms, quartered
  • lemon juice to taste
  • 4 extra-large eggs
  • 1 tbsp water per egg
  • salt and black pepper to taste
  • 4 tsp olive or avocado oil
  • 4 slices brown or wholewheat bread
  • plain chunky cottage cheese, rocket leaves and lemon wedges to serve

French toast with mushrooms Method

  1. Heat a frying pan over a medium heat and fry mushrooms without any oil, until golden brown and cooked. Add lemon juice to taste and keep warm. (No salt is needed.)
  2. Beat eggs and water together and season to taste. Pour the mixture into a shallow bowl or dish.
  3. Heat half of the oil in a large frying pan over a medium heat. Dip the bread, one slice at a time, into the egg mixture until both sides are coated with egg. Don’t leave the bread to soak in the egg mixture, as it will become too soggy.
  4. Fry 2 slices of bread at a time until golden brown on both sides. Repeat with the rest of the oil, egg mixture and bread.
  5. Serve warm French toast with pan-fried mushrooms, dollops of cottage cheese, rocket leaves, lemon wedges and a grind of black pepper.
  6. Tips: Use day-old bread for French toast so that it doesn’t fall apart when dipped in the egg mixture. Bacon is delicious with French toast and mushrooms. Take care when seasoning the egg mixture though, as bacon is quite sal
