Eggs in baked mushroom nest


For 4

You will need...

  • 500 g Button mushrooms
  • 1 Small onion, chopped
  • 30 g Butter
  • 125 ml Fresh cream
  • 4 Eggs
  • 50 g Grated Gouda cheese
  • 30 g Chopped parsley to garnish
  • Salt and pepper to taste

Eggs in baked mushroom nest Method

  1. Trim and wipe the mushrooms. Slice the mushrooms. finely dice the onion
  2. Melt the butter and pan fry the onions until they are transparent. Add mushrooms and cook for about 3 min, stirring from time to time.
  3. Stir in the cream, let it reduce and season to taste
  4. Spoon the mushroom mixture into 4 buttered individual ovenproof dishes
  5. Make a shallow well in the center of each and crack an egg into each. Sprinkle each slightly with salt, cover with grated cheese and brown in a moderately hot oven (200`) for about 12min, until the eggs have set but the yolk are still soft
  6. Garnish with chopped parsley and serve with toast
